Sometimes it’s fun to bypass the standard pancakes for a really creative brunch dish. This is usually only the case for a (rare) non-hungover brunch because let’s face it, no one wants to try funky sauces, seafood or escargot after a night of heavy drinking. Straight bacon.
At Rosa Mexico, A-Tooch went out on a limb and tried something that turned out to be amazeballs — that really is the only word there is for it.
Behold: Jamón con Chilaquiles — Thick, smoked ham (similar to Canadian bacon) topped with soggy tortilla chips (this works, trust me), fluffy scrambled eggs, more crunchy tortilla strips, and a slightly creamy/slightly spicy Oaxaca salsa.
There were other unique and delicious dishes on the brunch menu at Rosa, though it’s not a place to drop in wearing your pajamas. Perfect for a family/special brunch.
