Chocolate Chip Cookiedough Pancakes

Miss Yunks has always loved pancakes. They’re her favorite weekend breakfast and have been since the 6th grade when she had mono and they were the only thing she’d eat. Her favorite pancake recipe is in the Joy of Cooking cookbook, and growing up Mom made them every Sunday. Thanks, Mom :)

Now, I make my own pancakes. I make them from a mix and I’m not ashamed. Aunt Jemima Buttermilk Pancake Mix tastes so good, like homemade, and is so simple: just add water. They make a good quick breakfast on weekends, or quick dinner during the week!

I also like to experiment with pancakes. I’ve made s’mores pancakes by topping the batter with chocolate chips and fluff. My new favorite pancakes to make are cookie dough pancakes. I first had them at Marathon Grill in Philadelphia. Recently I had some leftover cookie dough and decided to add it to my weekend pancakes. Simply drop little bits of cookie dough onto fresh pancake batter.

When you flip the pancake over, the cookie dough cooks just enough so that it’s not totally raw, but not nearly cookie consistency.

Better than plain chocolate chip pancakes, chocolate chip cookie dough pancakes combine even more yummy goodness.

What better way to start your day?

    Holy kittens!
This is just what I was looking for!
My boyfriend texted me from work and asked for chocolate chip pancakes for dinner – well, I’m in a creative mood, so I wanted something that combined his love for cookies and desire for pancakes.
You – are – awesome! I used liberal amounts of Tollhouse cookie dough from the tub and paired the pancakes with bacon and garlic home fries.
