Miss Yunks’ first dinner guest in her new Cambridge apartment was Emily from Beyond the Textbook. Emily and I have known each other since we were very young and are excited to have recently reconnected! We planned to make a simple pasta meal – cooking for a vegetarian and a lactose intolerant is a piece of cake! Mmm cake…
To start, we cut up some eggplant and grape tomatoes, tossed them in olive oil, salt and pepper, and roasted them.
Miss Yunks’ new oven is super sensitive and while the smoke alarm goes off when the oven is hot, it also cooks really fast. It took about 10 minutes to roast eggplant. In any other oven it takes closer to 40 minutes. I’m liking my weirdly fast oven!
We simply tossed the roasted veggies with pasta and added some spinach. We also enjoyed glasses of wine that Emily brought over as a house-warming gift! It was peach flavored white wine and delicious!
The pasta was yummy too. Simple foods can be so refreshing on a late summer’s night.
We take so many photos of food; sometimes we forget take photos of people.

Yayy!! so much fun!! What a great post! I’m literally laughing out loud looking at the M+M pillow! All I can think of is “Is it cool, or embarrassing?” And definitely more dinner dates in the future!!
