Cabot Creamery contacted TFAW and asked if we’d like to sample their new product: Serious Snacking reduced fat cheddar cheese. Complimentary cheese? Of course we said yes! We were able to chose two flavors to sample. We each received a bag of 50% reduced fat garlic & herb cheddar and 50% reduced fat pepper jack cheese. The cheese comes in individually wrapped slices that are perfect for snacking.
A-Tooch and friends gobbled them down snack-style in about a week. No time to waste. For reduced fat cheese, these have a really strong flavor!
Miss Yunks rarely eats raw cheese so she planned a meal to incorporate the Cabot cheese. She made a lasagna-inspired dish with phyllo dough, vegetables, and of course the Cabot cheese.
She layered sheets of phyllo dough with olive oil in between each layer and topped phyllo layers with three slices of each flavor of the Cabot cheese.
She topped the cheese layer with a bag of frozen vegetables, sauteed with a bit of olive oil, teriyaki sauce, salt, and pepper.
Then the veggies were topped with another layer of phyllo dough layers with olive oil. Some grated pecorino romano cheese covered the phyllo dough.
Baked at 350 for about 15 minutes, the final product is delicious! The bites with the garlic Cabot cheese are very garlicky and the flaky crust is a great companion to the cheesy veggies. The bites with the pepper jack cheese are just as tasty.

This sounds good! I would totally just do boring cheese and crackers lol.
That looks delicious. I’d probably just tear open the cheese and snack on it while making something for dinner!
