Miss Yunks really likes making homemade pizza. It’s a perfect, quick and simple weeknight dinner and can be as nutritious as you want. Miss Yunks also really likes Trader Joe’s bruschetta and after ordering bruschetta pizza in New Hampshire and seeing it on a few blogs, she decided to throw Trader Joe’s bruschetta on a pizza of her own.
Trader Joe’s has some of my favorite products. I like their store bought pizza dough the best too. To add more veggies to this pizza, I roasted some broccoli. I took the easy approach here and bought a bag of broccoli florets ready to use, so all I had to do was toss them in some olive oil and salt before roasting. I had BF roll out the dough (he’s really good at stretching out dough and tossing it in the air all fancy). I had a little bit of ricotta leftover and used it as the first layer on my bruschetta pizza. I then evenly spread the bruschetta over the ricotta, tossed on some roasted broccoli, and sprinkled a little bit of grated gruyere cheese. I had the cheese because I also made vegetarian french onion soup this night and topped the soup with a layer of gruyere. (Post on onion soup coming soon.)
I had preheated my oven to 500 degrees and baked the pizza for about 15 minutes.
I loved this pizza because I love Trader Joe’s bruschetta; BF did not love it because he didn’t like the tomatoes and there wasn’t enough cheese for him. I suggest this pizza if you want a light dinner or sliced smaller as an appetizer. It’s not exactly a meal on its own. Roasting the broccoli reminded me of how much I like broccoli and how easy it is to prepare vegetables. For some reason I have a hard time getting my daily dose of veggies, so I like adding them to pizzas and typically carbo-loaded meals.

I love making homemade pizza. I’ve never used a Trader Joes crust or their bruschetta. Sounds tasty!
I love homemade pizza too! I’ve gotten into making my own pizza dough but I’ve heard great things about the TJ’s pizza dough!

Oooh I love Trader Joe’s! Roasted broccoli and bruschetta sounds awesome. If I make some version of this at home, I would prob add dollops of fresh mozzarella cheese – another one of my faves!
