Happy summer, foodies! Today’s guest post, the final in a series of 3, comes from our friend Seattle Mary. Mary (pictured left), a NY native and A-Tooch’s former foodie partner in crime, has been living in Seattle for a while now. She also has been living a vegan lifestyle for a while now (a big shocker, you can imagine, to someone who spent the better part of one summer consuming burgers and pizzas with this girl!) We asked her to convince us that vegan is delish with a sweet and a savoury recipe, as well as a remake of one of our favs — featured below.
Seattle Mary: Who doesn’t love Nachos? I’ve certainly made them for dinner several times when I’m under a time crunch and just have a craving that needs to be satisfied. For me, the craving is usually guacamole and I turn it into a meal of nachos. This dish can easily be tailored to whatever you’ve got on hand, or whatever you’re in the mood for. Most of the time this is what mine looks like:
Vegan Nachos
Corn tortilla chips
Daiya cheddar style cheese shreds
Black bean & corn “salad” (black beans, corn, chopped tomatoes, red pepper, red onion, cilantro, chili powder, cumin, lime juice, salt, pepper)
Dollup of Tofutti non-dairy sour cream
Guac (so simple, yet so divine – I usually just mash up some ripe avocado with salt, pepper, garlic, lime juice)
Does this really need instruction? Lay the chips on a plate and top with the cheese shreds. Microwave for about 40 seconds until the “cheese” melts, and top with the remaining ingredients. Sub salsa if you don’t have ingredients for the black bean and corn salad. Enjoy. (My mouth is watering as I type this.) I’m signed up for a Vegan Nachos class at my local Whole Foods later this month and I’m super pumped about it!
I could go on for days about my love of food and the city I live in, but I won’t overstay my welcome here on TFAW. Being vegan(ish) isn’t really as Birkenstock and granola hippie as it used to be. I hope you’ll consider trying some of these recipes, a new fruit, vegetable, or grain, or participating in Meatless Mondays. It’s really all about being kinder to yourself and the environment in which you live.

Awesome recipe! I love nachos (and a thing called ‘haystacks’ that are like nachos, but more like an unmixed taco salad). This will certainly spice up my menu. As I was reading I was reminded of a new (to me) brand of vegan dairy substitutes called WayFare Foods. They have a sour cream sub as well. Interesting because it’s made from oats!
