We love the classic grilled cheese and tomato soup combo. There’s something so satisfying about dipping buttery, cheesy bread into hot tomato soup.
About six weeks ago (yes this post is a tad overdo) I was searching for a simple yes satisfying recipe that would be special enough for W’s birthday and also manageable to make on a work night. Notice how I just upgraded BF’s blog nickname to W? Now that we’re engaged it feels appropriate.
When I found Joanne’s recipe for Apple, Leek, and Gruyere Grilled Cheese I knew I had found my dinner solution. I love sneaking vegetables into dishes full of cheese and carbs.
The apple, carmelized leek, and gruyere created a perfectly delicious and comforting birthday dinner. This is definitely a recipe worth repeating. I made a roasted tomato and eggplant soup to pair with the grilled cheese.
The soup was inspired by roasted tomato and eggplant soup I had on vacation in Park City. I used this roasted tomato soup recipe from Closet Cooking with the addition of one medium sized eggplant, cut into chunks and roasted.
Both recipes were quick enough for a work night – but with the sophisticated flavors of each dish you would think they required more time!

I <3 grilled cheese! I love adding caramelized onions to mine. I've also recently seen some recipes that used shaved Brussels sprouts – I'm hoping to try that soon!
