If you are averse to using cake mix in your recipes, stop right here. TFAW have no shame. In fact, it just may be one of the best and most delicious baking “shortcuts” of all time.
Like most rainy Friday afternoons in the office, I was daydreaming about what I might bake (then consume tons of on the couch) later that evening. A friend recommended a tried-and-true recipe from none other than his old babysitter, Sally. She must have been a pretty cool sitter if she served these puppies all the time.
Cake Batter Blondies
Adapted from sally’s baking addiction
1 box yellow cake mix
1/2 cup 0% Greek yogurt (recipe originally called for canola oil, I found that Greek yogurt helped cut some of the extreme sweetness)
1/2 cup milk
1 egg
1/2 cup white chocolate chips
1/2 cup colored sprinkles
Preheat oven to 350° F. Combine cake mix, yogurt and egg in a bowl, then add the milk slowly so your cake batter is as dense and sticky. Mix in the sprinkles and white chocolate chips. Pour into an 11×7 baking pan, throw a few more sprinkles on top, and bake for 25-30 minutes until golden. Allow to cool for at least 30 minutes so the center sets, before cutting into squares.
Doesn’t get any more fun than that right there.
Yup, these were a hit. They’re extremely dense and sweet, so you may want to cut them into smaller bites than regular brownies. Or, not. Your choice
