Camping Food

A few weeks ago, Miss Yunks went on her first camping trip with her BF.  She wasn’t sure what a vegetarian would eat while camping and prepared for a dinner and breakfast of s’mores.  Well, BF had other plans to make sure this was the best first camping experience.

BF said he would bring the food on our camping trip, but I still didn’t know what to expect.   He surprised with me a gourmet camping meal!  He spent the day before we left gathering fruits and veggies and preparing a healthy and delicious dinner.

For our camping appetizer, he sliced potatoes into rectangles – which I think is pretty fancy – and baked them.  We topped the potato rectangles with hummus, grape tomatoes, and spinach.  The combination of textures and flavors from the potato, hummus, and tomato really compliment each other.  The potato was a unique base and the creamy hummus and juicy tomato tasted so fresh and was so unexpected to eat next to a campfire.

For the main meal, he had prepared quinoa and topped it with tomato, spinach, cucumber, and fresh squeezed lemon juice.  Quinoa is like a superhero grain.  It takes on the flavor of whatever you add to it but it’s surprisingly full of protein – making it a really healthy smart option for a vegetarian.  The lemon juice was the perfect flavor to squirt on top.

I’d never made real s’mores over a campfire before, so I brought the ingredients for dessert and he taught me how to roast a marshmallow.  Not as easy as it seems!  I burned one or two before I got it just right.  But don’t worry, I ate them, didn’t waste them.

I really like roasted marshmallows.  Next time I might skip the graham and chocolate parts and just eat roasted marshmallows.

I always love eating well with good company, and doing it by a campfire makes it even more special.   Thanks to my BF, I had a great first camping experience!

    That sounds like an excellent camping trip meal.. so well-thought-out. When you said you prepared for all s’mores, I was thinking that wouldn’t be a bad thing!
